It’s the winter season here in Washington and it’s too bad that we can’t go outside and fire up the grill or the smoker for that matter. It’s to wet and much to cold to be outside tending a fire. But, I have a hankering for some BBQ! The next best thing to getting my BBQ fix with a homemade flare is to reconnect with my tried and true and does not disappointed Slow Cooker.
This recipe is super easy, it’s one of those set it and forget it recipes that gives you the time back in your day that you need; to do tons of other things. You can tailor the seasonings used in the recipe any way you like, the only key factors are the meat portion to acid and adding in the liquid smoke to get that outdoor grill or smoker cooked flavor. Wright’s brand liquid smoke is what I prefer to use and they offer a variety of smoke flavors so you can get the craft smoke flavor you love from smoking meats outdoors.
Once your pork is slow cooked you can use it for a variety of dishes from sandwiches to street tacos, nachos or just eat it as is. Smother your pork in your favorite BBQ sauce, make some coleslaw, some fresh onion rings or serve it with some hot and spicy pickles as I did! You can double or triple this recipe depending on the capacity of your slow cooker and the best part is you can make this in advance and hold it in the fridge for up to 4 days or freeze the cooked meat for up to a month. If frozen, thaw the meat in the fridge overnight for the next days use.
