Dried Fruit

  • To replace dried fruit in a recipe remember the ratio is 1 pound of reconstituted dried fruit for every 4 pounds of fresh fruit.
  • To speed up reconstitution fill up a 2 cup measure fill with water and place plastic wrap over the top, microwave on high power for 2 minutes. let the fruit stand in the microwave for another 3 minutes to rest before draining water.
  • When working with sticky fruit pieces use a little powdered sugar in your hands to help keep the pieces from sticking to your hands or sticking together.
  • If you find chopping dried fruit with a knife is not working to your advantage try cutting pieces off with kitchen shears to the size you are looking for, between every couple of cuts dust a little powdered sugar on the blades to keep from sticking.
