Pearl Barley Chicken Waldorf Wraps

Chicken and Barley Waldorf Wraps


  • 1 ½ cups cooked, drained pearl barley
  • 2 chicken breast, cooked and shredded
  • 1/3 cup dried tart cherries
  • 1/3 cup coarsely chopped pecans
  • 1/4 cup thinly sliced celery
  • 1 medium red or green apples, thinly sliced
  • 1 pint Red grapes, halved
  • 1/3 cup fat-free mayonnaise dressing or salad dressing
  • 1/3 cup fat-free sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 – 1 1/2 teaspoons dried rosemary, crushed
  • Butterhead (Boston or bibb) lettuce leaves


In a medium bowl combine barley, chicken, dried cherries, pecans, apples, grapes and celery. For dressing, in a small bowl combine mayonnaise, sour cream, lemon juice, honey, and rosemary. Add dressing to barley mixture; stir gently to coat, chill for at least 1 hour.  Serve in chilled prewashed butter lettuce leafs.
