Ingredients
- 1 ½ cups cooked, drained pearl barley
- 2 chicken breast, cooked and shredded
- 1/3 cup dried tart cherries
- 1/3 cup coarsely chopped pecans
- 1/4 cup thinly sliced celery
- 1 medium red or green apples, thinly sliced
- 1 pint Red grapes, halved
- 1/3 cup fat-free mayonnaise dressing or salad dressing
- 1/3 cup fat-free sour cream
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 – 1 1/2 teaspoons dried rosemary, crushed
- Butterhead (Boston or bibb) lettuce leaves
Directions
In a medium bowl combine barley, chicken, dried cherries, pecans, apples, grapes and celery. For dressing, in a small bowl combine mayonnaise, sour cream, lemon juice, honey, and rosemary. Add dressing to barley mixture; stir gently to coat, chill for at least 1 hour. Serve in chilled prewashed butter lettuce leafs.
