Barley Santa Fe Salad


  • 1 1/2 cups cooked, drained pearled barley
  • 1-15oz corn, rinsed and drained
  • 1-15oz black beans rinsed and drained
  • 1/4  white onion, small dice
  • 1/2 red bell pepper, small diced
  • 2 Roma Tomatoes, small dice
  • 1/2 Jalapeno, small diced
  • 1 Tsp Garlic Salt
  • 2 Tsp Chili Powder
  • 1/2 Tsp ground Cumin
  • Juice and Zest of ½ Lime
  • 1 Handful fresh cilantro, finely chopped
  • Avocado, Garnish (optional)


Cook barley as package directs, drain if needed and set aside to cool.  Toss the cooled cooked barley, diced tomatoes, corn, black beans, red bell and onions in large bowl, sprinkle with ½ tsp garlic salt, cumin and chili powder.  Add jalapeno, cilantro and lime juice and zest, mix thoroughly and taste.  Add more garlic salt as needed.  Serve chilled.
