Ingredients
• 2 Tbs. canola oil
• 1 onion
• 1 bunch broccoli
• 1 red bell pepper
• 1 package super firm tofu
• 3 cloves garlic
• Small amount of ginger, grated
• ¼ cup soy sauce
• 1/8 cup mirin
• 1 package brown rice noodles
Directions
Blanch broccoli and set aside, cook brown rice noodles, lightly oil them and set aside. Lightly sauté all veggies with garlic, ginger and tofu, soy sauce and mirin for few minutes, toss in noodles to coat and serve.
