Banana Pecan Bread

  • 7 oz.             Pastry Flour
  • 2.95 oz.         Sugar
  • .37 oz.           Baking Powder
  • ¼ Tsp.          Baking Soda
  • ½ Tsp.          Salt
  • 1.77 oz.         Pecans, chopped
  • 2.95 oz.         Eggs
  • 7 oz.             Ripe Bananas
  • 2.95 oz.         Oil or Butter, Melted


Mix all dry ingredients together in one bowl and mix wet ingredients together in another, once both mixes are prepared, mix together the wet and dry ingredients until just combined, do not over mix.

Pour batter into loaf pan lined with parchment and bake at 375 degrees for 35 – 50 minutes; check using a toothpick to the center of the loaf until a fine crumb is formed. Remove from pan after 5 -10 minutes and cool on wire rack.  Once completely cooled, dust loaf with powdered sugar if desired.
