Roasted Beet Salad


  • 2 Large Beets, Roasted
  • 2 – 3 Tbsp, olive oil
  • 1 small can mandarin oranges
  • 4 Scallions, chopped
  • Garlic, minced
  • Toasted Sesame Seeds (optional)


Wash beets and rub in olive oil, garlic, thyme, salt and pepper, roast in oven on 400 degrees for about 40 minutes, remove let cool and remove skin.  Cut beets into bite sized chunks.  Toss beets with a little more olive oil, mandarin oranges with a little juice, scallions and small amount of garlic. Garnish with toasted sesame seeds if desired.
